Rice with Mushrooms and Foie Recipe

Ingredients to make Rice with mushrooms and foie:

  1. 4 cups of rice
  2. 50 grams of Funghi (mushrooms)
  3. 50 grams of Foie
  4. ½ liter of vegetable broth
  5. ½ onion unit
  6. 1 pinch of salt
  7. 1 jet of Oil

How to make Rice with mushrooms and foie:

  • To prepare the rice with mushrooms we chose a risotto rice. As for the mushrooms, we opted for dried Italian funghi…, although this exquisite recipe can be prepared with mushrooms or another variant.
  • The first step is to hydrate the mushrooms. We leave them to soak for half an hour, so they will also release the soil they may contain. The broth that they leave will also be used to prepare the rice with mushrooms and foie.
  • In a saucepan, add a little oil and the chopped onion. Let it brown generously for a few minutes.
  • Next we pour the rice, we fry it a little with the oil and then we pour a ladle of vegetable broth. For about ten minutes we will let the rice cook, constantly adding broth as requested.
  • Next, strain the mushrooms and add them to the rice. Reserve the mushroom broth. We leave it in a bowl without moving it, in such a way that the remains of dirt or dust settle at the bottom. In this way we can use this aromatic broth, always taking it from the surface with a ladle.
  • From now on we will be adding mushroom broth to the risotto, replacing the vegetable broth. We will let the rice cook for about five more minutes together with the funghi, and then we will add the foie cut into pieces.
  • We will be stirring constantly, adding more broth if necessary, and after between 15 and 20 minutes the rice will be ready, with the melted foie.
  • Plate the rice with mushrooms and foie and add a few flakes of Parmesan cheese. It is a dish that cries out for a red wine and, as an accompaniment, a fresh rocket or spinach salad goes well, or a panatela salad to continue with the Italian menu. Bon Appetite!
