Rice with Lobster Recipe

Ingredients to make Rice with lobster:

  1. 1 unit of lobster (500 gr.)
  2. 400 grams of white shrimp
  3. 300 grams of bomba rice
  4. 1½ liters of seafood broth
  5. 1 unit of onion
  6. 2 units of Pear tomato
  7. 2 garlic cloves
  8. 1 unit of Chilli
  9. 1 glass of Brandy
  10. 1 pinch of sweet paprika powder
  11. 1 pinch of ground Ñora
  12. 1 pinch of Cinnamon
  13. 1 splash of olive oil
  14. 1 tablespoon parsley
  15. 1 pinch of salt

How to make Rice with lobster:

  • We will start with the seafood broth that if you want you can buy it already prepared or make it at home. To do this, peel the prawns and place the skin and heads in a pot with a little oil. Sauté with half the brandy and add a liter and a half of water, let it cook over low heat.
  • Separately, prepare the rice. Fry the chili together with one of the garlic in a paellera. Once fried, remove the two ingredients from the pot, leave them in a mortar to crush them later.
  • In the same pan, fry the grated onion and when it is transparent add the grated tomato. Meanwhile, chop and clean the lobster. When the sauce is ready, add the chopped lobster and let it soak up the flavors, turning it around a few times.
  • Retrieve the mortar and prepare the seasoning for the rice. To do this, crush the previously fried chili and garlic with all the spices (except the parsley), the other clove of raw garlic and the rest of the brandy. Booking.
  • Add the rice to the paella pan and remove the smaller pieces of lobster from it, leaving only the head part. Add the seasoning from the mortar and stir everything well.
  • Go adding the seafood broth little by little while you stir the rice with the sauce, the idea is that the rice releases the starch. Add all the broth in three parts.
  • After a few minutes, add the peeled prawns and the small pieces of lobster. Correct the seasoning with salt if necessary and cook over low heat until the rice is cooked to the desired point.
  • Finally, serve the rice with lobster, decorating with fresh parsley. The rice can be more or less soupy depending on the cooking time that is to taste.
