Rice with Clams and Prawns Recipe

Ingredients to make Rice with clams and prawns:

  1. 250 grams of Clams
  2. 250 grams of rice prawns
  3. 350 grams of Rice
  4. 3 garlic cloves
  5. 1 onion
  6. ½ red pepper
  7. 1 tomato (optional)
  8. 2 bay leaves
  9. ½ glass of white wine
  10. 1 bunch of parsley
  11. 1 piece of Turmeric or coloring
  12. 1 pinch of salt and white pepper
  13. 1 splash of olive oil
  14. 1 pinch of ground cumin

How to make Rice with clams and prawns:

  • First we must clean the clams, put them in water with a little salt and leave them at rest to release the sand.
  • I usually put them in a strainer inside a container with water so that the strainer does not touch the bottom of the container, in this way the sand that they release will settle at the bottom. Remember to remove them from both.
  • Meanwhile, we peel the prawns and remove their heads. We don’t throw anything away. Reserve the prawns until you have to put them in the rice.
  • We use the shells and heads to make a broth. So, we put them in abundant water with a little salt and some vegetables, such as onion, leek and parsley. When it is ready we pass it through a strainer and reserve.
  • I make the broth with vegetables but in these cases I do it alone, adding some thorn or head that I have in the freezer.
  • In a low casserole, add a little oil and fry the chopped garlic and onion together with the bay leaf. When the onion is tender, add the red pepper along with the tomato and continue stirring for about 5-10 minutes.
  • When the sauce is done, add the drained clams and drizzle with a little wine. While stirring, we wait for the alcohol to evaporate and the clams to open before adding the rice and seasoning with a pinch of ground cumin.
  • Sauté the rice well and add the reserved fish broth along with the turmeric or coloring. We taste and rectify the salt if necessary, add a little ground white pepper and let the rice cook.
  • When the rice is ready, add the peeled prawns and let them rest for 5 more minutes, during which time the prawns will be done but they will not be hard.
  • When serving our rice with clams and prawns, we add chopped parsley to decorate and enjoy.
