Ingredients to make Chicken Curry Rice:
- 2 cups of water (480 milliliters)
- 200 grams of rice
- 1 chicken breast
- 2 teaspoons of curry
- 50 grams of chopped onion
- 2 cups of chicken broth
- 2 tablespoons of butter
- 1 dessert spoon of olive oil
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of chopped parsley
How to make Chicken Curry Rice:
- To start preparing this succulent dish of rice with chicken curry without cream, the first thing you should do is melt a tablespoon of butter with a drizzle of oil in a fairly large skillet.
- In this fat, fry the chopped chicken together with the onion cut into small squares or chopped, as you like. Then, add the curry and stir well to integrate it into the meat. If you add this spice before the chicken is finished cooking, the chicken curry rice will have much more flavor because it will have penetrated the meat better.
- Add the rice to the chicken and sauté it for a couple of minutes. Add the chicken broth and water until all the ingredients are covered and stir well so that the curry is distributed correctly.
- Tip: To follow the original recipe, we recommend opting for the basmati rice variety.
- Cover the pan and cook over low heat until the curry chicken rice is dry, that is, until there is no broth left. This process can take up to 20 minutes.
- Tip: If you prefer the chicken curry with rice to be soupier, add a little more water or chicken broth.
- If you see that it dries up but the chicken rice is not done, add a little more broth. When almost all the liquid has been consumed, turn off the heat and let the preparation rest.
