Rice with Chicken and Vegetables Recipe

This recipe for rice with chicken and vegetables is ideal for both children and athletes due to its healthy energy intake. Growing children are very active and, just like athletes, they need to eat foods rich in carbohydrates.

Chicken rice is a dish that combines chicken protein with rice hydrates. On the other hand, it is a low-fat dish, since chicken is characterized by being lean meat.

Ingredients to make Rice with Chicken and Vegetables:

  1. 400 grams of chicken breast
  2. 2 carrot
  3. 1 green pepper
  4. 1 yellow bell pepper
  5. 1 zucchini
  6. 350 grams of Rice
  7. 1 pinch of salt
  8. 1 splash of olive oil
  9. 1 spring onion

How to make Rice with Chicken and Vegetables:

  • We gather all the ingredients to prepare the rice with chicken and vegetables. Apart from the vegetables that we have used, you can add others such as aubergine or even natural tomato.
  • Boil the rice in abundant water with a little salt. To give you an idea, the ideal amount of rice per person, when it comes to dry rice, is 80-100 grams. I usually measure it in handfuls but if you have a scale we recommend that you weigh it.
  • Once the rice is boiled, drain it, cool with water and reserve.
  • Tip: The cooking time depends on the manufacturer’s instructions.
  • Cut the vegetables into squares as indicated in the image. In the case of carrots and zucchini, we peel them beforehand.
  • In a frying pan we put 2-3 tablespoons of olive oil and add the vegetables in the following order: spring onion, peppers and carrot. Before incorporating the next vegetable, let each one cook for about 3 minutes.
  • For the preparation of this rice with vegetables, we will add the zucchini that normally takes less time to cook. Season with salt and pepper and cook for 4 more minutes.
  • In another skillet we sauté the chopped chicken breast and add a little salt and ground black pepper. It will be ready in 5 minutes if the pieces are not too big.
  • Once we cook all the ingredients, we add the cooked rice and the chicken to our vegetable stir-fry. Remove and rectify salt if necessary. You can also season with some aromatic herb such as oregano or basil.
  • The rice with chicken and vegetables can be taken as a main course accompanied by a light cucumber salad and an apple dessert with yogurt. Bon Appetite!
