Ingredients to make Rice with Chicken and Spices:
- 4 cups of rice (prepared separately)
- 6 kilos of chicken, cut into 8 pieces
- 3 tablespoons vegetable oil
- 2 medium onions, chopped in brunoised
- 4 garlic cloves, finely chopped
- 250 grams of peas or peas
- 1 carrot chopped into
- 1 teaspoon curry powder
- 8 saffron strands or 2 panda peppers
- 5 ground black pepper
- 1 pinch of nutmeg
- 1 pinch of salt
- 300 ml of water
- 300 ccs of dry white wine
- 1 pinch of chili pepper or chili to taste
How to make Rice with Chicken and Spices:
- Put a large pot on the fire with the oil, when it is hot, fry the chicken pieces, previously seasoned and floured, until golden brown
- Go removing the dams as they go golden.
- In the oil that remains (add more if necessary), fry the onion trying to detach those that have adhered to the chicken flour.
- Add the garlic, fry for a couple of minutes and add the other ingredients, mix, put the chicken pieces on top and cover.
- Let cook about 20 minutes.
- While preparing the steamed rice.
- Place a medium thick-bottomed pot on the fire, put all the ingredients in it.
- Mix so that the salt dissolves, and add the rice.
- Cover the pot and as soon as it boils, lower the heat to a minimum.
- Let cook 20 minutes.
- Check that it is cooked and stir it with a spoon trying to loosen the grains.
- Remove the chicken from cooking (turn off the heat) empty the cooked rice and stir with a large spoon, trying to make it well mixed.
