Rice with chicken and seafood recipe

Ingredients to make Rice with Chicken and Seafood:

  • ½ kilogram of rice
  • 250 grams of Prawns
  • 250 grams of mussels
  • 150 grams of squid
  • ¼ teaspoon Saffron or food coloring
  • 4 units of tomato
  • 3 tablespoons of olive oil
  • 150 grams of Peas
  • 250 grams of chopped chicken
  • ¼ teaspoon Turmeric powder
  • 1½ liters of chicken broth
  • 4 garlic cloves
  • 2 units of onion
  • 1 unit of red pepper

How to make Rice with Chicken and Seafood:

  1. To start preparing the rice with chicken and seafood we must prepare the ingredients. To do this, finely chop the onion and garlic, julienne the pepper, peel the prawns, wash the mussels and squid well, which you should cut into rings.
  2. Place the tomatoes to boil with water for about two minutes. Then let cool under cold water to peel and chop finely.
  3. Apart, lightly fry the chicken until it browns well and reserve. You can use thighs that have more flavor.
  4. In the same pan as before, make a sauce over medium heat with the onion, garlic, saffron and turmeric. After about three minutes add the tomato and fry everything together for another three minutes
  5. Next, add the rice and stir well for 5 minutes so that it is impregnated with all the flavors of the sauce. When the rice begins to look transparent, add the chicken broth and leave on the heat until it boils.
  6. When it starts to boil, place the lid on the pot and let it continue to boil for about ten minutes. Then add the chicken pieces and let it simmer for about 20 minutes.
  7. After this time, add the rest of the shellfish to the preparation along with the peas. Continue cooking until the liquid has been consumed.
  8. Let it rest and serve the rice with seafood, decorating with a slice of lemon and a few leaves of parsley or cilantro. And if you like this dish you can also try the chicken fried rice to which you can add the seafood that you like the most.
