Rice with Cabbage and Ripe Plantain Recipe

Ingredients to make Rice with Cabbage and Ripe Plantain:

  1. ¼ cabbage unit
  2. ½ tablespoon of margarine
  3. 1½ cups of round white rice
  4. 3 cups of hot water
  5. 1 pinch of salt
  6. 1 teaspoon Mild Curry
  7. 1 unit of Banana
  8. ¼ cup of grated coconut (25 grams)
  9. 1 pinch of ground cinnamon
  10. 1 tablespoon cumin seeds

How to make Rice with Cabbage and Ripe Plantain:

  • The first step will be to cook the cabbage in the microwave. To do this, grate the cabbage on the coarse side of the grater (removing the outer leaves and the stem) and mix with the cumin seeds in a microwave-safe bowl. Bring to full power covered for 5 minutes, then uncover, stir and repeat process.
  • Separately, divide the banana in two and cut slices with one half and make a puree with the other, mashing with a fork. Reserve the slices for the final decoration.
  • Next, fry the rice together with the cabbage in a pan or saucepan with the melted margarine. Stir everything well so that both the rice and the cabbage are impregnated with the margarine.
  • Add the hot water to cover the rice and add the banana puree, salt and curry. Continue cooking over moderate heat and add more water or correct the seasoning of the rice if you consider it necessary.
  • For decoration, brown the banana slices with margarine and cinnamon.
  • Serve the rice with cabbage and plantain sprinkling a little grated coconut on top and accompanying with the plantain slices.
