Rice with broccoli and chicken recipe

We love broccoli! For this reason we try to include it in multiple recipes like this one, with rice and chicken, two ingredients that are very beneficial for health. To make the dish even healthier, we have decided to use brown rice, although if you do not have this ingredient you can always use regular rice.

Ingredients to make Rice with Broccoli and Chicken:

  • 1 glass of brown rice
  • ½ broccoli
  • 2 crushed garlic cloves
  • 4 tablespoons olive oil
  • 1 small onion chopped
  • 2 glasses of boiling water
  • 1 dessert spoon of salt
  • 1 pinch of black pepper to taste
  • 2 chicken breast fillets

How to make Rice with Broccoli and Chicken:

  1. The first step is to leave the brown rice in water for 3-4 hours.
  2. It is important to carry out this step because, being a type of unprocessed rice, it contains physic acid or phytate that hinders the absorption of some nutrients.
  3. Soaking rice helps remove this acid and, in turn, makes it easier to cook.
  4. However, it should be pointed out that the amounts we use for cooking, in general, are not harmful and we could even skip this step if we don’t have much time; if we are not in a hurry, we recommend doing it.
  5. After the soaking time, chop the onion and fry it in a pan with hot oil. When it is transparent, carefully add the hot water and season with salt to taste.
  6.  And if you want to give even more flavor to the rice with broccoli and chicken recipe, add a little chopped leek.
  7. Right after adding the hot water, add the rice, turn up the heat, and wait for it to boil.
  8. Once it starts to boil, you will need to cook the brown rice over medium heat, also adding the peeled garlic cloves.
  9. Trick: Add a bay leaf to the rice to enhance the flavor.
  10. While the rice is cooking, take the opportunity to wash and cut the broccoli to taste.
  11.  Now you have two options, cook the broccoli together with the rice once the water starts to boil or cook it separately.
  12. In case you want to cook the rice with broccoli, you should pour a little more water.
  13.  We recommend cooking the ingredients separately to ensure that the rice stays loose.
  14. When the water starts to boil remember to lower the heat.
  15.  Likewise, cover the pot and let it cook for 15-20 minutes.
  16. Once there is no water left, turn off the heat and leave the rice covered for 10 more minutes.
  17. Separately, cook the chicken and shred it or cut it into strips and skip them in a pan with hot oil.
  18.  This done, it remains only to mix all the components of the dish and season with pepper to taste.
  19. This recipe for rice with broccoli and chicken is very easy to make, it is delicious and it is nutritious. To make it suitable for weight loss, it is advisable to reduce the tablespoons of oil to two.
