To make the dish even healthier, we have decided to use brown rice, although if you don’t have this ingredient you can always use regular rice.

  • 1 glass of brown rice
  • ½ broccoli
  • 2 garlic cloves, minced
  • 4 tablespoons of olive oil
  • 1 small onion chopped
  • 2 glasses of boiling water
  • 1 dessert spoon of salt
  • 1 pinch of black pepper to taste
  • 2 chicken breast fillets

How to make brown rice with chicken and broccoli? The first step is to leave the brown rice in water for 3-4 hours. It is important to carry out this step because, being a type of unprocessed rice, it contains phytic acid or phytate that makes it difficult to absorb some nutrients. Soaking the rice helps remove this acid and, in turn, makes it easier to cook. However, it should be noted that the quantities we use for cooking, in general, are not harmful and we could even skip this step if we do not have much time; if we are not in a hurry, we recommend doing it.

After the soaking time, chop the onion and fry it in a pan with hot oil. When it is transparent, add the hot water carefully and season with salt to taste. And if you want to give even more flavor to the broccoli and chicken rice recipe, add a little chopped lee.

Right after adding the hot water, add the rice, turn up the heat and wait for it to boil. Once it starts to boil, you should cook the brown rice over medium heat, also adding the peeled garlic cloves.

Tip: Add a bay leaf to the rice to enhance the flavor.

While the rice is cooking, take the opportunity to wash and cut the broccoli to taste. Now you have two options, cook the broccoli together with the rice once the water starts to boil or cook it separately. In case you want to cook the rice with broccoli, you should add a little more water. We recommend cooking the ingredients separately to ensure that the rice is loose.

When the water starts to boil remember to lower the heat. Likewise, cover the pot and let it cook for 15-20 minutes. Once there is no water left, turn off the heat and leave the rice covered for another 10 minutes.

Separately, cook the chicken and shred it or cut it into strips and sauté them in a pan with hot oil. This done, it only remains to mix all the components of the dish and season with pepper to taste. This recipe for rice with broccoli and chicken is very easy to make, it is delicious and it is nutritious. To make it suitable for losing weight, it is advisable to reduce the tablespoons of oil to two.
