Rice recipe with vegetables gratin with cheese

Ingredients to make Rice with vegetables gratin with cheese:

  • 200 grams of rice
  • 100 grams of mushrooms
  • 1 liter of vegetable broth or water
  • 1 zucchini
  • 1 onion
  • 1 green pepper
  • 1 red bell pepper
  • 1 clove garlic
  • 200 grams of natural tomato
  • 4 tablespoons of olive oil
  • 100 grams of grated Parma or Mozzarella cheese
  • Salt

How to make Rice with vegetables gratin with cheese:

  1. We make the refried vegetables for the rice by cutting the zucchini into cubes, the onion into squares and the peppers into squares, removing the seeds.
  2. Heat the oil in a saucepan and fry the onion over low heat for about five minutes.
  3. Add the zucchini, the peppers and the whole or roughly chopped mushrooms.
  4. Let cook over low heat until they begin to brown.
  5. Add the tomato and crushed garlic and cook for another 30 minutes.
  6. We put to the point of salt.
  7. Add the rice and let it cook with the vegetables.
  8. Cover with the vegetable broth or with water and let it cook over low heat for 18 minutes.
  9. After this time we add to the rice the shredded Parma cheese or the grated Mozzarella on top.
  10. We put in the oven with gratin for 5 minutes.
  11. Remove the casserole from the oven and let it rest for 5 minutes.
  12. We serve hot.
