Rice Recipe with Vegetables and Wild Asparagus

When the cold starts to appear, you want spoon dishes, right? For this reason, I share a rice recipe that is prepared with such a humble ingredient as wild asparagus, it is very tasty and very healthy!

Ingredients to make Rice with vegetables and wild asparagus:

  1. 150 grams of round grain rice
  2. 100 grams of wild asparagus
  3. 2 ripe tomatoes
  4. 1 small onion
  5. 2 cloves of garlic
  6. 2 small carrots
  7. 1 green bell pepper
  8. 1 red bell pepper
  9. 1 splash of extra virgin olive oil
  10. 1 pinch of salt
  11. 1 pinch of sweet paprika

How to make Rice with vegetables and wild asparagus:

  • First we prepare the rice base. To do this, peel the garlic cloves and brown them in a large frying pan in which we have put a splash of extra virgin olive oil.
  • Peel and chop the onion, and add it together with the garlic. We poach then, peel and chop the carrot and add it to the pan.
  • Wash, remove the seeds from the inside and chop the peppers to put them, too, in the pan. We are stirring from time to time so that the vegetables of the sauce do not burn.
  • Finally, peel and chop the tomatoes and add them to the pan. We continue with the pan on the fire until all the vegetables are soft. At this point, we put the fried rice with vegetables and asparagus in the blender glass and beat until everything is crushed.
  • Pour the sauce into a saucepan and add the chopped asparagus, salt and a pinch of paprika. Add water (half a liter more or less), stir well and put on the fire.
  • When it starts to boil, add the rice and stir well. We keep the casserole on the fire until it is done, stirring frequently so that it does not stick. If the rice with wild asparagus is dry, we add a splash of water, never too much so that it does not remain excessively soupy.
  • When the rice is cooked (approximately 20 minutes), remove it from the heat and let it rest for about five minutes. After this time, we serve it and enjoy. This recipe for rice with vegetables and wild asparagus is perfect to enjoy with the family on cold days, since it helps the body regulate temperature. And for dessert, we can prepare a rich chestnut cake or a cheese cake, whatever we like the most!
