  2. 1 red bell pepper
  3. 2 tomatoes
  4. 3 tablespoons of olive oil
  5. 1 clove garlic
  6. 250 grams of mushrooms
  7. 400 grams of frozen stew
  8. 1 teaspoon sweet paprika
  9. 350 grams of rice
  10. 1 liter of vegetable broth
  11. 1 teaspoon of turmeric

How to make Rice with vegetables and mushrooms:

  • Peel the onion and garlic and chop them. Cut the pepper in half, remove the seeds and chop it into small pieces. Peel the tomatoes, remove the seeds and crush them with the help of a blender or food processor.
  • Tip: If you prefer, you can leave the garlic whole and remove it once the rice is done.
  • In a wide saucepan, heat the oil. When it is ready, add the onion, the pepper and the garlic, and fry for 3 or 4 minutes.
  • Add the crushed tomato and fry for 3 more minutes.
  • Add the mushrooms. In this case, we have used canned baby mushrooms, but you can use a variety of mushrooms. If they are oyster mushrooms, cut them into smaller pieces. Stir for 1 minute.
  • Add the stew (it is not necessary to defrost it previously) and stir for 2 or 3 minutes.
  • Trick: We have used a frozen stew that has peas, broad beans, green beans and carrots, but you can add fresh vegetables and remove the ones you don’t like or add others that you like better.
  • Add the rice and a teaspoon of sweet paprika. Stir for 1 minute. Set aside the soffit and reserve.
  • To make the vegetable broth, we have recycled the hard part of the asparagus, the stems of the young garlic sprouts, the green part of the leeks and some pieces of broccoli that had turned yellow. Put everything in a pot with water and cook it for 30 minutes.
