Ingredients to make Rice with sea bream and prawns:
- 2 people)
- One medium sea bream (cut into four slices, head apart)
- 6 prawns
- ½ red bell pepper
- ½ green pepper
- 1 medium tomato (ripe)
- 3 garlic cloves
- 1 glass (of water) of rice
- Olive oil
- Salt
- sugar
- food coloring (if we don’t like the rice to come out white)
How to make Rice with sea bream and prawns:
- A fish broth is made by boiling 1 ½ liters of water with the head of the sea bream and the heads of the prawns.
- It has to boil until it reduces to 1 liter or so.
- Meanwhile, cut the red and green peppers into thin strips, and the previously peeled tomato into cubes.
- Fry the garlic in a wide frying pan or peeler, with moderately hot oil. When they begin to brown, add the peppers, and when they are half-fried, add the diced tomato to the sauce, and add salt to taste and sugar half the amount that has been put salt.
- The sauce is stirred so that it does not stick for three or four minutes, and then the sea bream slices are placed, frying them for three minutes on each side.
- Strain the broth made with the prawns and the head of the sea bream, and add three glasses (of water) of broth to the peeler.
- The fire is raised until it begins to boil and then the rice is added.
- Spread the rice, add the coloring, add the shrimp tails and cook the rice for ten minutes over high heat and another ten over low heat (the time may vary somewhat depending on how hard the rice is).
- It is advisable to try it at the beginning of cooking to rectify the point of salt if necessary.
- When the rice is dry, cover it for another ten minutes with a cloth and let it rest.
