Rice recipe with meatballs

Ingredients to make Rice with meat balls:

  • 500g of special minced beef
  • 4 slices of lactal bread
  • 100cc of milk
  • 2 tablespoons chopped parsley
  • 3 garlic cloves, minced
  • 1 egg yolk
  • 1 large onion chopped
  • 250g of rice
  • 750 of meat broth
  • 500g tomato puree
  • 2 bay leaves
  • 1 chopped bell pepper
  • Peppers
  • Salt
  • pepper to taste
  • Oil to fry quantity necessary.

How to make Rice with meat balls:

  1. Cook the rice in the broth for 20 minutes from the boil, strain it and reserve the broth
  2. Crumble the bread and soak in the milk and drain well.
  3. In a bowl, place the minced meat, ½ chopped onion, 1 chopped garlic, 1 tablespoon of parsley, 100g of grated cheese, the soaked bread, the yolk, salt and pepper.
  4. Mix the preparation well if possible with your hands and form small balls of 3 to 4 cm in diameter.
  5. Then, in a container with hot oil, fry them medium term, remove them with a slotted spoon and dry on absorbent paper.
  6. In a container place 4 tablespoons of oil and sauté the ½ onion, 2 chopped garlic, the bell pepper, add the tomato puree, paprika, bay leaf, salt and pepper.
  7. When the sauce comes to a boil, lower the heat and add the meatballs and rice.
  8. Add the reserved broth and cook over a minimum heat for 5 to 10 minutes, turn off the heat, cover and let rest before serving, sprinkle with the rest of the chopped parsley.
