Ingredients to make Rice with meat balls:
- 500g of special minced beef
- 4 slices of lactal bread
- 100cc of milk
- 2 tablespoons chopped parsley
- 3 garlic cloves, minced
- 1 egg yolk
- 1 large onion chopped
- 250g of rice
- 750 of meat broth
- 500g tomato puree
- 2 bay leaves
- 1 chopped bell pepper
- Peppers
- Salt
- pepper to taste
- Oil to fry quantity necessary.
How to make Rice with meat balls:
- Cook the rice in the broth for 20 minutes from the boil, strain it and reserve the broth
- Crumble the bread and soak in the milk and drain well.
- In a bowl, place the minced meat, ½ chopped onion, 1 chopped garlic, 1 tablespoon of parsley, 100g of grated cheese, the soaked bread, the yolk, salt and pepper.
- Mix the preparation well if possible with your hands and form small balls of 3 to 4 cm in diameter.
- Then, in a container with hot oil, fry them medium term, remove them with a slotted spoon and dry on absorbent paper.
- In a container place 4 tablespoons of oil and sauté the ½ onion, 2 chopped garlic, the bell pepper, add the tomato puree, paprika, bay leaf, salt and pepper.
- When the sauce comes to a boil, lower the heat and add the meatballs and rice.
- Add the reserved broth and cook over a minimum heat for 5 to 10 minutes, turn off the heat, cover and let rest before serving, sprinkle with the rest of the chopped parsley.
