Ingredients to make Arroz con pato a la Norteña:
- 1 kilogram of rice
- 1½ cups grated loche squash
- 1 bunch of Cilantro
- 1 head of Garlic, peeled and minced
- 1 bottle of Oil
- 1 pinch of Pepper
- 2 kilograms of Duck, peeled and clean, cut into pieces
- 1 kilogram of green peas, peeled
- ½ cup pumpkin, chopped
- 1 large black beer bottle
- 1 cube of Cazonador
- 1 pinch of salt
How to make Northern-style Duck Rice:
- Heat the oil in a frying pan and brown the duck pieces.
- Once golden, remove them to a container.
- Pour the oil where the duck pieces were fried into a pot.
- Add the garlic, the peas.
- Blend the cilantro with the black beer and pour it into the pot.
- Add 4 cups of water, the grated and chopped squash.
- Season with salt, pepper and seasoning.
- Place the duck dams to finish cooking them.
