Ingredients to make Rice with curried vegetables and mushrooms:
- 200 grams of Rice
- 100 grams of mushrooms
- 1 liter of vegetable broth
- 1 zucchini
- 1 onion
- 1 green pepper
- 1 red pepper
- 1 clove garlic
- 500 grams of natural tomato
- 1 teaspoon curry
- 2 tablespoons of olive oil
- 1 pinch of salt
How to make Rice with curried vegetables and mushrooms:
- We make the refried vegetables for the rice by cutting the zucchini into cubes, the onion into squares and the peppers into squares, previously removing the seeds.
- Heat the oil in a saucepan and fry the onion over low heat for about 5 minutes.
- Add the zucchini, the peppers and the whole or coarsely chopped mushrooms and cook over low heat until they begin to brown.
- Add the tomato and crushed garlic and cook for another 30 minutes.
- We put to the point of salt.
- Add the rice together with the teaspoon of curry and let it sauté with the vegetables.
- Cover with the vegetable broth or with water and let it cook over low heat for 18 minutes.
- Remove the casserole from the heat and let it rest for 5 minutes uncovered.
- We serve hot.
