Before making this recipe, the first step is to get all the ingredients ready. Keep in mind that for this Colombian recipe you must use natural coconut.
Break the coconut very carefully, with the help of a hammer if necessary. Remove the water, peel it, grate it and blend it with two cups of hot water.
Next, strain the coconut milk very well and reserve it.
Add the two cups of coconut milk to a pot, cook over low heat until they break a boil, add the sugar and salt.
Finally add the rice and cook over medium heat until the coconut milk evaporates. Cover and continue cooking over very low heat for another 30 minutes.
