Rice recipe with brothy chicken

  • 1 unit of chopped chicken

  • 1 splash of olive oil
  • 1 liter of chicken or vegetable broth
  • 1 green pepper
  • ½ red pepper
  • 1 onion
  • 4 grated tomatoes

How to make Rice with brothy chicken:

  1. So that the preparation of this soupy chicken rice recipe is much easier, the first thing you should do is gather all the ingredients, well measured and separated, on the work table.
  2. We will cook the rice with chicken in a clay pot, if you do not have one, use a thick-bottomed pot. So, we heat the olive oil and make a base sauce with finely chopped pepper and onion. We skip.
  3. When it is almost sautéed, add the tomato to the sauce and stir everything. After a few minutes, remove from the heat and blend to form a sauce.
  4. On the other hand, we heat a little oil in the pot where we will cook everything and seal the chicken pieces. Cook until golden brown on all sides and remove.
  5. In that same pot, with the chicken cooking oil, add and lightly fry the rice.
  6. Return the chicken to the pot and stir together with the rice. To make this chicken rice dish you can leave the large pieces, as we have done, or if you prefer you can cut smaller pieces of boneless chicken.
  7. Next, we add the broth and stir just a little. Remember that to complete this soupy rice you can use chicken broth or a vegetable broth if you prefer, bought, made with concentrated pills or homemade.
  8. Next, we add the sauce made with the sauce and season our rice to taste, adding salt and pepper. Continue cooking over low heat for 15-20 minutes.
  9. After this time, we check that the rice is ready and ready.
