Rice recipe three Chinese delights

Ingredients to make Rice three Chinese delights:

  • 400 grams of jasmine or basmati rice
  • 600 milliliters of water (2½ cups)
  • 2 carrots
  • 150 grams of cooked ham
  • 2 eggs
  • 100 grams of canned peas
  • 1 tablespoon seed oil
  • 5 tablespoons of soy sauce

How to make Three Chinese Delights Rice:

  1. Put the rice in a bowl and add plenty of water. Rinse the rice in the water and drain it in a fine mesh strainer. Add water again, rinse the rice again and drain it again in the colander.
  2. Put the rice in a pot and cover it with the 600 ml of water. Cover the pot, bring the water to a boil and cook the rice for 12 minutes over low heat without uncovering the pot. Remove the pot from the heat and let the rice rest for 1 hour without uncovering the pot.
  3. After the hour of rest, uncover and, with your hand, see releasing the grains of rice so that it does not remain caked. Cook the rice well in advance so that it is dry and loose.
  4. Wash, peel and cook the carrots in water for 10 minutes. They have to be tender, but firm, so that there is an authentic Chinese three delights rice.
  5. Drain the carrots and cut them into small squares with a sharp knife. Booking.
  6. For this rice recipe, use a thick cooked ham, you can buy a thick slice and cut it into small square pieces or buy it already chopped. Booking.
  7. Grease a frying pan, better if it is a wok type, lightly with seed oil and remove the excess with kitchen paper. Beat the eggs and cook them as if you were going to make an omelet. Once you see that it is gaining consistency, break them with a spatula to form tortilla pieces.
  8. Add to the same pan a tablespoon of seed oil and also add the rice. Give a few turns with a spatula.
  9. Also add the carrot cubes, cooked ham and peas. Mix everything well.
  10. Tip: if you use fresh peas you will have to cook them first in boiling water.
  11. Finally, add the tablespoons of soy sauce. Remember that you have not added salt to the three Chinese delights rice, so taste it and decide if you add another spoonful of sauce or it already has enough salty flavor. Give it a few more turns so that it takes the flavors well. Remove from heat.
  12. Serve the three Chinese delights rice right away in a large bowl so that each diner can get what they want.
