Ingredients to make Arros pobler:

  • 500 gr. of rice
  • 250 gr. of duck
  • 500 gr. free-range chicken
  • 259 gr. rib
  • 1 tender pigeon
  • half rabbit
  • 1 cuttlefish
  • 250 gr. of artichokes
  • 100 gr. of peas
  • 200 gr. shrimp
  • 2 “ramallet” tomatoes
  • 1 large onion
  • Pepper
  • Cinnamon
  • Celery
  • Parsley

How to make Arros pobler:

  1. Arrange a clay pot on the fire with olive oil, if possible of good quality. Once hot, fry the prawns. Once golden, remove them.
  2. Next, fry all the meats in the same oil, previously cut into regular pieces, seasoning with salt and black pepper.
  3. When the meat is golden, we will add the onion that we will have cut very small. When both ingredients have taken a nice golden color.
  4. Add the two grated tomatoes. Add enough water to cover everything and a little more, making it cook over low heat.
  5. Once we notice that the meat is tender, the vegetables and rice should be incorporated. Let it cook gently, taking care that it does not go beyond the cooking point.
  6. A few moments before serving it, we will add a mince made with the roasted liver of birds and rabbit, assorted species, two cloves of garlic, several sprigs of parsley and a few threads of saffron.
  7. Let give a little boil and serve it
