Rice Recipe Baked with Vegetables

The recipe for baked rice with vegetables that we is very versatile, since it can be prepared with practically any vegetable that we like or that we have in our fridge. On this occasion, we are going to use artichokes, peppers, green beans and asparagus, but, as we say, we can adapt these ingredients to the season.

Cooking the rice in the oven gives us loose rice with a lot of flavor. To do this, you can use a round or bomba rice, the only thing we must bear in mind is that this cooking method requires a little more time, which, in addition, can vary depending on the type of oven. I am going to explain the time I needed and how to control the rice so that it is good for us; once you get the point of your oven, it will always be good for you. Read on and find out how to make baked rice with vegetables.

Ingredients to make baked rice with vegetables:

  1. 400 grams of round rice
  2. 2 artichokes
  3. 12 asparagus
  4. 15 green beans
  5. 1 piece of green pepper
  6. 1 piece of red pepper
  7. 1 clove garlic
  8. 2 tomatoes
  9. 1 splash of olive oil
  10. 2 liters of vegetable broth
  11. 1 pinch of food coloring or saffron
  12. 1 pinch of salt

How to make Baked Rice with Vegetables:

  • Clean the vegetables, disinfect them and cut them into small pieces. Clean the artichokes by removing the outer leaves and leaving the center to cut it into 4 pieces.

  • Heat a saucepan with a splash of oil over high heat. If possible, use a casserole that you can put in the oven later. When the oil is hot, sauté the vegetables for 5 minutes.
  • On the other hand, chop the garlic and grate the tomatoes. Once the vegetables are sautéed, add the minced garlic, stir and add the grated tomato, as well as a little salt. Let everything cook for a few more minutes.

  • Add the rice to the pan and stir to integrate it with all the ingredients for a couple of minutes.
  • Pour the broth. To do this, keep in mind that I have doubled the broth for each cup of rice. Let the broth heat up with the rice and add a little food coloring. While it heats up, turn on the oven to 180ºC with heat up and down. Once it starts to boil, let it all cook for 7-8 minutes.
  • You can use homemade vegetable broth or chicken broth, both options are perfect!
  • Put the rice casserole with vegetables in the oven, placing it in the center, and let it finish cooking. I had it 18 minutes in the oven at the same temperature. To know if it is ready, take a little rice with a spoon and taste it. The top part seems harder because it is toasting, but you will see that it is delicious.
