Rice Curry Recipe with Chicken and Vegetables

Ingredients for Curry Rice with Chicken and Vegetables:

  1. 350 grams of Rice
  2. 1½ liters of chicken or vegetable broth
  3. 4 pieces of chicken breast
  4. 1 red pepper
  5. 2 carrots
  6. 8 beans
  7. 1 splash of extra virgin olive oil
  8. 1 pinch of salt
  9. 1 pinch of black pepper
  10. 2 teaspoons of Curry

How to make Curry Rice with Chicken and Vegetables:

  • Here we have the ingredients for this curry chicken rice. You can use the vegetables that you have hanging around the fridge. As for the broth, in the photo only a part of all that I used appears.
  • Wash the vegetables and cut them into small pieces of similar size. We put them in a pan with already hot extra virgin olive oil, and we make a sauce. We will need at least 10 minutes, over medium heat, and stirring from time to time.
  • When the vegetables begin to be ready, we will add the chicken, which we have previously chopped with the help of scissors and seasoned. Stir well and let the chicken take color.
  • Next, we add the rice and let it also take on some color. Add the curry to taste (I was generous), a little salt, and then add the chicken or vegetable broth, preferably already hot.
  • We will follow the instructions of the brand of rice in terms of cooking times. In my case, I had it for 20 minutes. I was adding broth as the rice drank it, and also touching up flavors with curry, salt and black pepper.
  • Here we have the curry rice with vegetables and chicken ready to serve. I left it quite soupy because I kept some of it in a lunch box for the next day.
  • This rice with chicken and curry vegetables is delicious with a glass of red wine and a starter salad with lamb’s lettuce and goat cheese
