Ingredients to make Rice Croquettes:
- 200 grams of cooked rice
- 200 grams of cream cheese in tacos
- 2 units of egg yolks
- 6 tablespoons grated cheese
- 150 grams of York ham
- 2 units of whole eggs
- 1 handful of breadcrumbs
- 1 jet of olive oil
- 2 units of leeks
- 1 pinch of salt
How to make Rice Croquettes:
Cook the white rice in a broth prepared with the leeks, water, salt and a drizzle of olive oil. It is important not to sauté it before so that it becomes somewhat doughy, although it should not be past.
Mix the rice with the very finely chopped ham. Add the two egg yolks and the grated cheese and mix to form a homogeneous mass.
When you have the dough ready, shape the rice croquettes. Ideally, they should be the size of an egg, but you can make them however you like.
When they are done, make a hole with your finger, put a piece of cream cheese and close the croquette again. This step is optional, if you don’t want to make them stuffed, remove the cream cheese from the list of ingredients. Coat the croquettes in beaten egg and breadcrumbs before frying them in hot oil, but not excessively, so that the heat reaches the center and melts the cheese. Keep them in the pan until they are golden. Rice croquettes are served with a tomato sauce or any sauce left over from a stew.
