Rice and parsley omelet recipe

Ingredients to make Tortilla de arroyo parsley:

  • 11/2 cup rice
  • 8 eggs
  • chopped parsley
  • Salt

How to make rice and parsley omelet:

  1. Mix with the eggs the rice already stewed with garlic and parsley.
  2. Season slightly, add the chopped parsley and curdle the tortilla by rolling it up so that it is well golden but juicy inside
