Ingredients to make rice alfajores:

  • 2 rice crackers
  • 20 grams of dulce de leche
  • 5 grams of peanut butter
  • 15 grams of chocolate to melt

How to make rice alfajores:

  1. To start with the rice alfajores recipe, first choose two rice cookies of the same size that serve to face and assemble a neat rice alfajores.
  2. You can choose the square or round rice crackers, both will work perfectly. In our case, we recommend that you choose those with the whole grain of rice, ideally integral.
  3. Tip: it is better not to choose thin rice cakes made with flour, as they generally have a greater variety of ingredients and additives.
  4. Next, choose the filling for your rice alfajores. In this case, we recommend mixing dulce de leche with peanuts to add more fiber and healthy fats.
  5.  However, remember that you can also fill it with just dulce de leche, peanut butter or lemon cream for filling.
  6.  These are just the original versions, but you could also make it with chocolate ganache or homemade brown sugar fig jam.
  7. Spread one of the cookies with the mixture of candy and peanuts. We recommend doing it on the smoothest face.
  8.  Close it and reserve it.
  9. Prepare the last ingredient of your rice alfajor before finishing. It is about homemade melted chocolate.
  10.  You can melt it in the microwave at minimum power for 1 minute, you can also do it in a water bath in a container over boiling water, without coming into contact with it.
  11. Bathe the rice alfajor with the melted chocolate and store it in the fridgeor leave it at room temperature to warm up for about 10 minutes.
  12. Now you can eat the delicious rice alfajores and serve the way you like!
