Rib and Potato Broth Recipe

This is a typical Colombian recipe, born in the Andean region but is consumed in almost the entire country. The recipe is very simple, it is mainly a broth made from boiled cow ribs with diced potatoes, garlic, onion and bits of cilantro or parsley (many people do not know cilantro or simply do not like its flavor). This broth is generally consumed for breakfast and I recommend it to recover from excessive alcohol consumption, cold or flu. Read on and prepare this rib and potato broth.

Ingredients to make Rib and Potato Broth:

  1. 1 liter of water
  2. 1 kilogram of beef rib in pieces
  3. 200 grams of long onion
  4. 5 dessert spoons of Cilantro
  5. 1 unit of white onion
  6. 1 dessert spoon of garlic paste
  7. 6 units of Potatoes
  8. 1 pinch of pepper
  9. 1 pinch of salt

How to make Rib and Potato Broth:

  • Our first step to make this broth recipe is to pre-list all the ingredients.
  • Bring a deep pot to medium heat and add a tablespoon of sunflower oil. Once hot, add the rib in pieces and let it fry a little.
  • Add in this step the salt, pepper and garlic paste to taste for the preparation of our Colombian broth. If you wish, you can make your own garlic paste by following this simple recipe.
  • Once you see that the rib is golden on both sides, add the liter of water to the pot where we have the rib and potato broth.
  • Add the potatoes, peeled and cut into squares or slices (as you wish) and let the homemade broth cook for approximately 20 minutes.
  • While the rib and potato broth is cooking, we must cut the long onion very finely as shown in the photograph.
  • Once the 20 minutes of cooking have passed, add the finely chopped long onion and some white onion hulls to flavor the recipe. Let keep for 10 more minutes and turn off the heat.
