Ingredients to make refreshing Gazpacho:
- 4 units of ripe tomato
- 1 unit of Cucumber
- ½ unit of green pepper
- ½ tablespoon chives
- ½ tablespoon of olive oil
- 1½ tablespoons Cilantro
- ½ cup of water (120 milliliters)
- ½ unit of green chili
- 1 pinch of salt and pepper
How to make Refreshing Gazpacho:
- To make this summer gazpacho, the first step is to get the ingredients ready. To do this, chop the tomatoes and discard the hard tail. Separately, peel and chop the cucumber and chop the pepper, chives and coriander, the latter two as finely as possible.
- Reserve the coriander for the final decoration and take all the ingredients to the blender or food processor you have at home and grind everything until you get a more or less homogeneous mixture. Go incorporating the ingredients little by little to facilitate the crushing, if necessary you can add a little more water.
- Pass the gazpacho through a sieve as many times as necessary to obtain a fine soup. Although if you prefer a colder soup with more texture you can strain it less.
- Take it to the fridge and let it cool overnight, this will release all the flavors, although if you are in a hurry to refrigerate the gazpacho for a couple of hours it will be enough.
- Serve the refreshing gazpacho very cold and decorate with the chopped fresh coriander. This soup is an ideal starter for hot weather, as is the pasta salad or the tropical salad with pineapple.
