Ingredients to make Red Soup:
- – 1 eggplant
- – 1 zucchini
- – 1 piece of pumpkin
- – 1 onion
- – 2 cloves of garlic
- – 1 large can of crushed tomato
- – olive oil
- – salt and white pepper
- – broth or water
- – boiled eggs
- – Chopped ham.
How to make Red Soup:
- Chop the onion and garlic and the vegetables are washed and cut into pieces. Heat the oil in a pot and sauté the chopped onion and garlic, then add the crushed tomato.
- When it cooks for about 10 minutes, stirring often so that the tomato does not seize, add the courgette, aubergine and pumpkin. Stir well for a few minutes, so that everything is mixed, and cover with broth or water.
- Let cook until the vegetables are tender and well integrated (about 30 min). We put out the fire and grind it (be careful with the splashes, it burns a lot!)
- We serve and add chopped egg and ham to taste.
