Red Soup Recipe

Ingredients to make Red Soup:

  • – 1 eggplant
  • – 1 zucchini
  • – 1 piece of pumpkin
  • – 1 onion
  • – 2 cloves of garlic
  • – 1 large can of crushed tomato
  • – olive oil
  • – salt and white pepper
  • – broth or water
  • – boiled eggs
  • – Chopped ham.

How to make Red Soup:

  1. Chop the onion and garlic and the vegetables are washed and cut into pieces. Heat the oil in a pot and sauté the chopped onion and garlic, then add the crushed tomato.
  2. When it cooks for about 10 minutes, stirring often so that the tomato does not seize, add the courgette, aubergine and pumpkin. Stir well for a few minutes, so that everything is mixed, and cover with broth or water.
  3. Let cook until the vegetables are tender and well integrated (about 30 min). We put out the fire and grind it (be careful with the splashes, it burns a lot!)
  4. We serve and add chopped egg and ham to taste.
