Red Pork Pozole Recipe

The red pozole (Jalisco, Sinaloa, Nayarit and Guanajuato) which in Nahuatl means “boiled” is a typical soup of traditional Mexican cuisine. This Mexican red soup can be made with vegetables, chicken or, in this case, pork.

In addition to other well-known soups, such as the Aztec soup with beans, the red pork pozole is a true delicacy that you have to try. And that is why we share this step-by-step recipe, with which you will learn how to prepare red pork pozole, a rich Mexican soup dish.

Ingredients to make Red Pork Pozole:

  1. 2 onions
  2. 1 kilogram of solid pork or pork meat
  3. ½ kilogram of backbone
  4. 5 tomatoes
  5. 2 kilograms of corn
  6. 5 guajillo chilies
  7. 4 large garlic cloves
  8. oregano to taste
  9. lemons to taste
  10. 1 piquin chili
  11. 1 bunch of radishes
  12. 1 lettuce
  13. 1 package of toast
  14. Salt to taste
  15. Chile de arbol (for the sauce)
  16. Lemons
  17. 1 cube of concentrated chicken broth

How to make Red Pork Pozole:

  • The meat is washed and boiled with 1/2 onion and 2 cloves of garlic and salt to taste, after gathering the ingredients to make this red pork pozole.
  • While the meat is cooking, wash the pozole corn, and when it is half cooked, add the corn (about 20 minutes after the meat is added) and a little oregano (it can be powdered or in branch).
  • Wash 5 tomatoes and put them to roast in a pan together with 2 garlic.
  • Boil the 5 guajillo chilies in a pot with plenty of water.
  • When we add the corn for the red pork pozole, cover the pot to finish cooking.
  • While we disinfect the lettuce and radish, with 5 drops of disinfectant. Then we cut the lettuce, onions, lemons and radishes into squares to accompany.
  • Blend the tomatoes with the deveined guajillo chilies (that is, remove the seeds), the 2 peeled garlic cloves and with a little water from the chilies (this is optional).
  • Strain the red pozole sauce to fry it. Until seasoning.
  • Add the fried sauce to the preparation.
  • We add to the red pork pozole 1 cube of chicken broth reduced in water from the pozole.
  • To accompany the red pork pozole, make a ground chili de arbol sauce with the corn (the tree chili is fried in oil, then ground with the corn, 1 lemon and 1 garlic, salt to taste and strain, you can add broth from the pozole) and it is ready to serve with the pozole.
