Red Pepper Salad Recipe

The red pepper salad is a special summer dish, ideal for taking advantage of seasonal products and eating fresh and light. Follow the easy recipe step by step and learn how to prepare a delicious and colorful salad.

Ingredients to make Red Pepper Salad:

  • 1 kilogram of red pepper
  • 1 unit of Tomato
  • 2 garlic cloves
  • 1 unit of onion
  • 1 can of prickly pear in oil
  • 1 jet of oil
  • 1 pinch of salt
  • 1 splash of balsamic vinegar
  • 1 handful of green olives
  • 2 units of hardboiled egg

How to make Red Pepper Salad:

To prepare this summer salad, the first thing you have to do is prepare a tray with baking paper. Place the peppers, onion and tomato, already washed, on it. Prick the tomato with a fork, add oil with a brush on the vegetables and take the tray to the preheated oven at 200º C. for about 40 minutes until they are completely roasted.

When they are ready, reserve each ingredient separately. To peel the peppers, place them in a bag until they cool, then you can peel them and reserve the juice they release.

With the vegetables already cold, cut the peppers into strips, the onion finely and press the tomato to obtain its juice. Mix the juice of this with that of the peppers, oil, vinegar and salt to make the summer salad vinaigrette. Keep everything in the fridge until serving time.

To serve the pepper salad, use a plating ring and place the onions as a base, then the peppers and finally the tuna. Place olives and grated boiled egg around the salad and finish by bathing everything with the vinaigrette.
