Red Chicken Stew Recipe

Ingredients to make Red Chicken Stew:

  • 1 chicken cut into pieces or 2 1/2 pounds of chicken pieces
  • Salt
  • Pepper
  • 2 tablespoons olive oil
  • 1 medium chopped onion
  • 2 chopped carrots
  • 3 garlic cloves, minced
  • 1 minced green chili (canella)
  • 2 diced tomatoes or a can of peeled tomatoes without draining
  • 1 chicken bouillon cube
  • 3 tablespoons chopped stuffed olives

How to make Red Chicken Stew:

  1. Season the chicken with salt and pepper.
  2. In a large cauldron or pot, heat the oil and brown the chicken, 2 to 3 minutes on each side.
  3. Remove from the pot and place on a plate where you sauté the vegetables.
  4. If you need to add a little more oil.
  5. Sauté onion, carrot, garlic and tomatoes until tender.
  6. Return the chicken and add the cube and cover with water (little), bring to a boil.
  7. Add the tomatoes or tomato paste, olives, bay leaf and oregano.
  8. Reduce the heat a little and keep a gentle boil, until the chicken is tender.
  9. Taste and adjust seasoning with salt and pepper
  10. Before serving add the cilantro, you can add peeled and chopped potatoes when returning the chicken to the pot to boil with the stew.
  11. Serve with white rice.
