Red Beans with Pork Recipe

Ingredients to make red beans with pork meat:

  • 1 pound of red beans
  • 4 cups of water (960 milliliters)
  • ¼ teaspoon ground cumin
  • 1 sour orange
  • ½ pound of pork
  • 2 cloves of garlic
  • 1½ dessert spoons of Salt
  • ¼ teaspoon ground pepper
  • ¼ teaspoon ground oregano
  • ½ cup of oil
  • 1 large onion
  • 1 cup of tomato sauce
  • 1 cup of bell peppers
  • ¼ cup dry wine

How to make red beans with pork meat:

1.Soak the beans in the 4 cups of water for about 2 hours. Meanwhile, cut the pork into pieces of about 5 centimeters.

2.Crush the garlic cloves with the salt, pepper, oregano and cumin. Add the sour orange juice to the mixture and cover the pork with this marinade.

3.When the red beans are already swollen, cook them in the same soaking water for approximately 3/4 hour, in a traditional saucepan, or 15 minutes in a pressure cooker, or until they begin to soften.

4.Put the pork meat in a saucepan with the marinade and let it cook until the marinade dries. Heat the oil and sauté the chopped onion, then add the chopped chili. Let it fry for a few more minutes.

5.Add tomato sauce, ground bell peppers and dry wine. Mix the beans (with the remaining water) with the pork and the soffit. Let them simmer, tightly covered, for about half an hour.

Tip: To replace the bell peppers you can use roasted and peeled ripe peppers or pepper pulp.

6.Serve the red beans with pork hot, accompanied by white rice and enjoy this exquisite dish.
