Red beans with pig’s trotters recipe

Ingredients to make Red Beans with pig trotters:

  • 750 gr red beans
  • 8 cups of water
  • 1 unit pig’s trotter
  • Home
  • 1 kilo ripe red tomatoes
  • 2 units white onion
  • 1 unit long onion
  • 5 cloves of garlic
  • neutral oil
  • Salt
  • Pepper

How to make Red Beans with Pig Trotters:

1.List all the ingredients.

2.Soak the beans in cold water overnight, cook in the same water with the pig’s trotters in the pressure cooker for 2 hours with a little salt.

3.For the Hogan, in a pan with oil, sauté the onions and garlic, finely chopped, add a little salt.

4.When the onions are translucent, add the finely chopped tomato and cook for 10 minutes over low heat, covered, until a smooth mixture is obtained, season with salt and pepper. If necessary, add a little sugar to control the acidity of the tomato.

5.Add the Hogan (reserve a little for presentation) to the beans, uncover and cook over high heat for 40 minutes, stirring constantly, until the desired consistency is obtained. Adjust flavor with salt and pepper.

6.Serve and add a little Hogan.
