Recipe of White beans with pork in adobo

Ingredients to make White Beans with Marinated Pork:

  • 500 grams of white beans
  • 2 medium potatoes
  • 1 leek
  • 1 onion
  • 1 red pepper
  • 3 garlic cloves
  • 3 carrots
  • 600 grams of Pork rib in marinade
  • 1 pig’s trotter in marinade
  • 1 Marinated pork ear
  • 1 pinch of salt
  • Olive oil

How to make White Beans with Pork in Marinade:

1.This white bean stew is designed to be prepared from one day to the next, so the night before it is prepared, we will soak the beans.

In a container we put the beans and cover them with twice the water and in another container, and to remove the excess marinade, we will also soak the meat.

2.The next day we proceed as follows. In a saucepan and with the same water that we have used to cover the beans, we boil the grains with a pinch of salt, half an unshipped onion, a couple of peeled carrots, also whole, the peeled garlic and the other sliced ​​carrot. When it boils, put it on medium heat and cover.

Secondly. In another pan and with new water, we cook the meat. I recommend using the pressure cooker for this.

3.Meanwhile, finely chop the rest of the ingredients, that is, the leek, the other half onion and the pepper. We will chop these three ingredients in brunoised while the potatoes in mirepoix.

4.To continue with the preparation of these delicious white beans, in a frying pan with a splash of oil, poach the leek, onion and pepper. When it is well poached we reserve.

We will monitor the beans from time to time and after an hour and a half we will remove the onion, garlic and carrots. With this vegetable we will make a sauce, so we crush them with a little of the cooking water and we will add it back to the beans together with the poached vegetables.

When we see that the beans have little left, add the potatoes and adjust the salt. If as the beans are made, we see that they are running out of water, we can add water from cooking the meat.

5.The beans are ready when they offer no resistance to pressure with your fingers. Personally, once finished, I like to introduce part of the meat that we have cooked into them so that it is even juicier.
