Ingredients to make The Original Peasant Soup:
- 400 g mixed and chopped vegetables or an envelope of peasant soup
- 150 g diced ham
- 2 boiled eggs
- 1 and 1/2 liters of water
- Salt
- 2 tablespoons extra virgin olive oil
How to make The Original Peasant Soup:
- Put the water and the vegetables in a pot over the heat, and add the vegetables and the diced ham.
- Put a little salt and if you want a little olive oil. I have not put it, it has been enough with the fat that the ham has released.
- It is left to cook until the vegetables are done, and that depends a bit on the taste: more or less al dente.
- In a separate saucepan, cook the eggs until hard, peel and chop.
- The soup is served with the chopped hard-boiled egg. The result is a rich and light dish, with hardly any fat, great for these cold days, and quite complete.
- You can add some pasta, a handful of noodles or tapioca.
