Recipe of the original Gazpacho Extremeño

Ingredients to make the original Extremeño Gazpacho:

  • 750 ml of water
  • 10ml olive oil
  • 4 cloves of garlic
  • 2 tomatoes
  • 100g dry breadcrumbs
  • 1 onion
  • Ground pepper
  • a pinch of salt
  • 10 ml of vinegar

How to make the original Gazpacho Extremeño:

  1. In the mortar or with a blender, we crush the garlic well, to which we will have added a little salt; then we add oil and we link the sauce as if it were an alioli.
  2. When it is creamy, add the breadcrumbs, previously soaked in water and drained.
  3. We continue working until we form a paste, which we will rinse with cold water, incorporating it slowly while continuing to stir, until it acquires a creamy consistency.
  4. Add salt and pepper.
  5. We pour the content into a salad bowl, where we add more breadcrumbs and let it rest for about ten minutes.
  6. When serving, add the finely chopped onion and tomato, peeled and cut into small pieces and, finally, the vinegar.
