Ingredients to make the original Extremeño Gazpacho:
- 750 ml of water
- 10ml olive oil
- 4 cloves of garlic
- 2 tomatoes
- 100g dry breadcrumbs
- 1 onion
- Ground pepper
- a pinch of salt
- 10 ml of vinegar
How to make the original Gazpacho Extremeño:
- In the mortar or with a blender, we crush the garlic well, to which we will have added a little salt; then we add oil and we link the sauce as if it were an alioli.
- When it is creamy, add the breadcrumbs, previously soaked in water and drained.
- We continue working until we form a paste, which we will rinse with cold water, incorporating it slowly while continuing to stir, until it acquires a creamy consistency.
- Add salt and pepper.
- We pour the content into a salad bowl, where we add more breadcrumbs and let it rest for about ten minutes.
- When serving, add the finely chopped onion and tomato, peeled and cut into small pieces and, finally, the vinegar.
