Ingredients to make the crumbs of the stain:
- A brown or hard crumb bread (from the previous day)
- 6 cloves of garlic
- 250 grams chorizo
- 100 grams of pancetta
- 1 dl of oil (one cup)

How to make Crumbs Stain:
The migas are simple dishes that constituted the fundamental diet of shepherds and people from the countryside of Andalusia, Extremadura, La Mancha and even Navarra. There are more than 15 different recipes for this dish.
They can be made with bread and flour, and can be accompanied by a wide variety of ingredients, from herring to fried eggs, from fried fish to fruits such as grapes or pomegranates. They can also be taken by dipping them in chocolate. Cut all the bread into thin slices or, better, in pinches, put it in a deep dish and add a little warm water, with salt.
The water is poured little by little on top of the bread, so that it soaks, without leaving it enguachirnao. Then let it rest for a few hours, covered with a cloth. The garlic is peeled and cut into slices. Cut the chorizo into slices and the bacon into cubes. Heat a deep frying pan with the oil.
