Ingredients to make the best Portuguese Stew:
- shank, 500 grams
- chicken, 750 grams
- black pudding, 150 grams
- sausage, 150 grams
- Serrano ham, 100 grams
- carrot, 2 pieces
- green bean, 250 grams
- sweet potato, 400 grams
- salt to taste
- bacon, 150 grams
- onion, 2 pieces
- cabbage, 300 grams
- cane bone, 2 units
- pig’s ear, 1 unit
- sausage, 150 grams
- turnip, 3 units
- rice, 350 grams

Wash the bones, the bacon and the meat, and put them in a large pot with plenty of cold water on the stove.

When it starts to boil, skim off any foam that forms.

Add salt and pepper and cook covered for 40 minutes. Add the chicken and cook until the meat and chicken are tender; remove both and reserve.

Add the sausages to the pot and cook for 15 minutes. Next, add the peeled and washed vegetables and cook for 20 minutes. Remove part of the broth and cook the rice.

To serve the stew, place the rice in a bowl with the sausages and carrots, and the rest of the ingredients in another bowl. The broth is served separately.
