Ingredients to make MENESTRA SOUP:
- 500g new potatoes
- medium leeks
- 500 g fresh or frozen peas
- 1 stalk of celery
- 75g cured ham
- 75 g thick noodles (fideuá type)
- 1 liter water
- 500ml milk
- 25g butter
- 2 tablespoons grated Parmesan cheese
- Salt
How to make MENESTRA SOUP:
- Wash the peas. In a pot with a tablespoon of oil, sauté the ham cut into pieces, add the peas. Cover with water and milk; bring to a boil over low heat.
- Meanwhile, peel the potatoes and cut them into cubes; wash and peel the leeks and cut into thin wheels. Wash the celery, remove the strings and chop finely. Put all the vegetables in the pot and cook over low heat for an hour with a little salt.
- Add the butter and the noodles, let it continue cooking, until everything is very tender, about ten more minutes. Let stand one hour. At the time of serving it is heated over the fire and sprinkled with grated cheese.
