RECIPE OF SHRIMP AND ELVER SOUP

Ingredients to make SHRIMP AND ELVER SOUP:

  • 1 kilo of prawns
  • 100 gr. gulas
  • 1 teaspoon of brandy
  • A glass of dry white wine
  • 100 cc of liquid cream
  • 40 grams of butter
  • Three quarters of a liter of fish broth
  • 2 tomatoes
  • 1 carrot
  • 1 onion
  • 1 clove garlic
  • A bunch of herbs (parsley, bay leaf and thyme)
  • Oil
  • Salt
  • Pepper

How to make SHRIMP AND ELVER SOUP:

  1. Peel the prawns reserving the heads and shells.
  2. In a saucepan, sauté the heads and skins with the onion and carrot cut into small pieces.
  3. We also add a little butter.
  4. Then the garlic, tomato and brandy.
  5. Next, add the wine and the fish broth, leaving it to cook for about twelve minutes. We pass it all through the blender and then through a Chinese.
  6. To this broth we add a little cream and let it boil.
  7. Add the prawn tails and the eels.
  8. We pick it up and serve it
