Recipe of Roman soup with pasta and vegetables

Ingredients to make Roman soup with pasta and vegetables:

  • For 4 people:
  • 1 liter of water
  • 100g red onion
  • 2 stalks of celery
  • 100g carrot
  • 1 chopped turnip
  • 1 tablespoon chopped basil
  • 1 tablespoon minced oregano
  • 1 clove garlic
  • 60 grams of pasta for soup
  • 2 teaspoons olive oil

How to make Roman soup with pasta and vegetables:

  1. Julienne (strips) the onion; the celery, we cut it into slices, like the carrot and the garlic; turnip, chop it into small squares.
  2. Sauté them for a few moments in a pan with water and cover them with a liter of water, leaving them to cook for half an hour.
  3. After that half hour, we take out the vegetables and pass them through a food mill, add the pasta for soups, basil and oregano, along with a pinch of salt.
  4. Let the whole thing boil for about 10 minutes.
