Recipe of Potatoes to the importance

  • 2 large potato
  • 2 egg
  • 2 tablespoons corn flour
  • 1 sprig of fresh parsley
  • 2 cups of oil for frying
  • 1 liter of beef or chicken broth
  • 1 pinch of turmeric or food coloring
  • 4 cloves of garlic
  • 1 small glass of brandy or white wine
  • 1 pinch of salt to the point

How to make Potatoes to importance:

Wash and cut the potatoes into slices of approximately one centimeter. They should be thick so they don’t fall apart during preparation. Meanwhile, heat a frying pan with plenty of oil.

This step is optional, but it has its advantages. Give the potatoes a quick blow of frying by leaving them in the oil for two minutes. In this way, you will ensure that the potato acquires a perfect point and they are not raw inside when you fry them later.

Once they are sealed, remove them to a plate with kitchen paper to remove excess oil. Peel the garlic cloves and take advantage of the hot oil to brown them. It is not necessary to cut them, you can throw them whole. After browning, take them out and reserve.

Put the eggs on a plate and beat them lightly; add a pinch of salt and parsley and pour the flour into another plate. Pass the potatoes through the beaten egg and then through the flour. Fry them for 3 minutes and do it in batches so they don’t stick to each other.

Tip: It is not advisable to fry the potato too much, it is simply a matter of sealing them.

Crush the garlic in a mortar and chop a little parsley to add to the mashed. In this way, you will obtain a garlic paste that will give the potatoes a special flavor point.
