Recipe of Micas with egg flower

The recipe for Micas con Nuevo’s Floor that we present below is a traditional recipe very similar to that of the famous chef Carlos Arginine. This dish, typical of Spanish cuisine, was born out of the need to recycle the old bread of the ancient shepherds. The crumbs can be made in many ways, but this time you will learn how to make the famous crumbs with egg flower.

Ingredients to make Micas with egg flower:

  • 500 grams of old bread (hard)
  • 200 grams of pork
  • 1 unit of green pepper
  • 1 unit of red pepper
  • 5 cloves of garlic
  • 2 units of Egg
  • 2 teaspoons of Paprika
  • 1 tablespoon of fresh parsley
  • 1 jet of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Micas with egg flower:

  1. List the ingredients.
  2. Heat a little olive oil in a pan and add the peeled and quartered garlic.
  3. Wash, cut the peppers finely, add them and season with salt and pepper. Cook them well; remove them from the pan and reserve.
  4. Defat the pork, cut it into medium to small pieces and brown them in the pan with a little more olive oil. When they are well cooked, remove them and reserve them together with the peppers and garlic.
  5. Cut the bread into very thin slices and take it to the pan until golden brown. Then add the vegetables and the pork that we had reserved.
  6. Mix the 2 tablespoons of paprika with 200 cc. of water and add it to the preparation. Cook until dry again, about 3 minutes.
  7. To make the flower eggs: Cut 2 large squares of plastic wrap (or transparent kitchen paper) and spread each one over a small container, marking the inside well. Place a teaspoon of olive oil and the egg in each one.
  8. Close without leaving air inside and tie with a string.
  9. In a saucepan, bring to a boil for 4 or 5 minutes.
  10. Then cut the upper part with scissors, open the plastic wrap and place on top of the crumbs when serving. Sprinkle the parsley on each plate. To enjoy! The micas with flower eggs can be served as a side dish or starter during a special meal.
