Recipe of LOIN AND APPLE SKEWERS

Ingredients:

  • 600 g fresh loin in one piece
  • 3 green apples
  • 1 small leek
  • Pinch of ground cinnamon
  • Nail
  • Nutmeg
  • Pepper
  • 6 tablespoons oil
  • 1 tablespoon honey
  • A splash of soy sauce
  • Sweet mustard, salt
  • 300g white rice
  • Chive stems
  • Parsley to decorate

How to make:

Clean the meat. On a board, cut the loin into regular and medium cubes. Peel the apples and take out round balls with a skimmer.

Insert on metal or wooden skewers (previously submerge them in water for at least 15 minutes), alternating the ingredients: three pieces of loin and three of apple. Wash, peel and chop the leek, mix it with the oil in a bowl; add the soy sauce, honey and mustard and beat with a fork.

Then add the rest of the spices without stopping stirring, brush each skewer with this sauce and rectify the point of seasoning. Grill the skewers on the griddle or in the pan, spraying them with the remaining dressing.

Put the well-spread rice in a presentation dish; Place the skewers on top once they are done and add the juice obtained from above. To finish, decorate with chive stems and parsley sprigs.
