Recipe of Lentils with Borage and Pumpkin

Ingredients to make Lentils with borage and pumpkin:

  • 100 gr of cooked lentils per person (you can buy them in a pot or cook them if they are from a pot, wash them well)
  • 300 gr of clean borage (without leaves only the stalks)
  • 1 liter of chicken or vegetable broth
  • 1 slice of pumpkin cut into cubes
  • Salt
  • 1/2 glass of white wine
  • Olive oil
  • 1 Egg per person

How to make Lentils with borage and pumpkin:

1.In a saucepan put water with abundant salt and the eggs and put them to cook. Once the water boils, let them cook for ten minutes. Turn off the heat and cool them with cold water.

2.Cut the borage into strips of 4 or 5 cm. Heat oil in a wok, add the borage and brown them, when you see that they are ready, add the diced pumpkin, stir well, and let them brown, stirring from time to time.

3.Add the wine and let it reduce. Add the washed lentils, add the broth and let them cook for ten minutes. Taste and rectify salt if necessary. If you notice that they are a little strong for your taste, add a little water and boil for five more minutes.

4.Serve the lentils with a hard-boiled egg cut in half per person. I hope you like it and enjoy
