Recipe of Iberian Snack with Oregano

Ingredients to make Iberian Snack with Oregano:

  • 1 pork tenderloin
  • 1 slightly spicy horseshoe chrizo
  • 1 glass of oil
  • 200 grams of lard
  • 1 tablespoon sweet paprika
  • Half a head of garlic
  • 3 bay leaves
  • Two tablespoons of oregano
  • Salt

How to make Iberian Snack with Oregano:

Clean the sirloin and pierce it in the center with your thumb, stuff the chorizo ​​into it, season it and mark it on the grill. Just so it takes on a little color. In a pot, pour the oil, the laurel with the whole unpeeled head of garlic, let it come to temperature.

Add the sirloin, fry a little on both sides and, being careful not to pass the meat, add the butter and let cook until the sirloin is ready, set aside.

Add the paprika and dilute it in the fat, let it cool and pass the fat through the Chinese once this is done, leave the sirloin in the fat. We serve a slice of warm sirloin on toasted farmhouse bread and cover it with the fat.
