Ingredients to make Game Pate:
- 2 large onions
- 60g butter
- 350g sliced unsmoked bacon
- 80 ml port
- 30ml brandy
- 500 g minced wild boar meat
- 90 g chopped bacon
- 200 g minced poultry liver
- 2 cloves of crushed garlic
- 2 medium beaten eggs
- Salt
- Freshly ground black pepper
How to make Game Pate:
Chop the onions and sauté them in the butter over medium-low heat, until translucent. Add to the pan with the onion and liqueurs, stir and remove from the heat. Transfer to a large bowl. Line a rectangular mold with the bacon, letting the slices exceed the height of the edges. Mix the remaining ingredients, the onion and stir until well incorporated. Pour into the mold, level and cover with the bacon. Cover the mold with baking paper and aluminum foil. Bake in a bain-marie for two hours at 180°C. Put weight on top and leave 12 hours in the fridge. Demolding.
