Recipe of fresh tuna marinated with wild asparagus

Ingredients to make fresh tuna marinated with wild asparagus:

  • ½ kilo of tuna in thick slices
  • 1 green pepper
  • 1 fresh spring onion
  • 1 tomato
  • 3 deciliters of virgin olive oil
  • 1 deciliter of cider vinegar
  • Salt
  • 8 wild asparagus

How to make Marinated fresh tuna with wild asparagus:

  1. Prepare the vinaigrette by mixing the vegetables chopped into brounoisse (small squares), the oil and the vinegar.

  3. Cut the tuna into thick cubes and marinate for 24 hours in the vinaigrette with the cut vegetables in a covered container in the fridge.
