- 2 kg of fresh beans
- 4 eggs
- 30 fresh garlic
- 1 spring onion
- 1 tomato
- chopped mint
- 1 tablespoon of flour
- Water
- Hojiblanca extra virgin olive oil
- Vinegar
- Salt
- Chopped parsley

How to make Fresh Garlic, Beans and Eggs:
1.Peel and shell the beans.
2.Cook them in a pan with water and a pinch of salt for 5 minutes.
3.Put a little oil in a saucepan.
4.Chop the onion and fry it.
5.Clean and chop the fresh garlic into 5-centimeter sticks and add them.
6.Sauté until lightly browned.
7.Peel the tomato, cut it into cubes and add it to the pot.
8.Mix well, season, add the minced mint and the flour.
9.Sauté briefly and add a little of the broth (resulting from cooking the beans) and the beans.
10.In another large saucepan put water to cook with a splash of vinegar.
11.When it starts to boil, lower the temperature of the fire and poach the eggs.
12.Serve the broad bean stew in a bowl and place the poached eggs on top.
13.Sprinkle with chopped parsley.
